Optimal soil conditions, very pure water, high density of trees, a low yield rate with high-quality olives, the wind and the sun of the desert, all this gives birth to Desert Miracle, an ultra-premium extra virgin olive oil with 0.2° maximum acidity and a unique taste.

Aroma > This delicately complex aroma takes in almonds, culinary herbs with a touch of basil, lemon and sweet banana. There is also a hint of woody hedgerows and wet grass.
Taste > Culinary herbs on the palate with sorrel, cucumber, red berry fruits and nuts. Very light bitterness but plenty of pepper which grows and then fades allowing the green herbs, nuts and sweet biscuits to return. The interesting after-taste takes in fudge and sweet banana with just a touch of hazelnut chocolate.
Style > Very sweet and delicate style of oil with a good burst of pepper.
Overall Assessment > This is an attractive and gently complex oil with a really sweet finish. Use it for general cooking, but particularly for desserts and baking.

Proud of my Italian oils I had a little reticence in trying a Moroccan oil. With my big surprise I found it really delicious. I used it raw, but I’ve to admit, it’s great for frying too. It has very hi smoke point that makes my ‘fritto misto’ lovely golden and crunchy. I highly recommend it!
