When out of nowhere in the desert an oasis of 300,000 olive trees, producing a golden nectar, springs up like magic you can really talk of a miracle. Optimal soil conditions, very pure water, high density of trees, a low yield rate with high-quality olives, the wind and the sun of the desert, all this gives birth to Desert Miracle, an ultra-premium extra virgin olive oil with 0.2° maximum acidity and a unique taste.

Oil description

The strength caresses the senses.

Aroma > This delicately complex aroma takes in almonds, culinary herbs with a touch of basil, lemon and sweet banana. There is also a hint of woody hedgerows and wet grass.

Taste > Culinary herbs on the palate with sorrel, cucumber, red berry fruits and nuts. Very light bitterness but plenty of pepper which grows and then fades allowing the green herbs, nuts and sweet biscuits to return. The interesting after-taste takes in fudge and sweet banana with just a touch of hazelnut chocolate.

Style > Very sweet and delicate style of oil with a good burst of pepper.

Overall Assessment > This is an attractive and gently complex oil with a really sweet finish. Use it for general cooking, but particularly for desserts and baking.

Although quite flavorful, this Dahbia-Arbequina blend compliments rather than over-powers the foods it is served with, whether they are fresh or cooked vegetables, fishes, poultries, and even meats. Desert Miracle has a highly flavorful taste and distinctive peppery finish you won’t forget.

Pruning system > olive trees cut into cups for some orchards, olive trees cut into hedges for other orchards

Density > 1,852 trees/Ha (1,35 meters between each tree and 4 meters between each row of olive trees)

Production > 330,000 liters of extra virgin olive oil with 0.2° maximum acidity when bottled

Harvest date > From the end of September to the end of December

Extraction temperature > First cold pressed, maximum 26°C
