Aroma > The fruitiness of ripe olive is clearly identifiable in nose and mouth with a great diversity of secondary aromas, above all apple and banana. It also has hints of other ripe fruit, almonds, tomato and fennel.

Taste > Highly flavorful.

Style > Robust and strong with a clear touch of sweetness and a distinctive peppery finish.

Overall Assessment > This is an attractive and strong complex oil with a really remarkable finish. Assessment to season fresh or cooked vegetables, fish, poultry and meats. This excellent extra virgin olive oil adds a touch of elegance to your dishes.

Density > for the new orchard of 90 Hectares: 1,465 trees/Ha (1.50 meters between each tree and 4.5 meters between each row of olive trees) – for the older orchard of 170 Hectares: 1’852 tress/Ha (1.35 meters between each tree and 4 meters between each row of olive trees)

Production > 545,000 Liters of extra virgin olive oil with 0.2° maximum acidity when bottled

Harvest date > From the end of September to the end of December

Extraction temperature > First cold pression, maximum 26°C
